A former operator of a pizza shop that was allegedly found filthy and infested with cockroaches has exposed part of his bottom to reporters outside court.

Louay Shaker and Cecille Garcia Yalung faced the Adelaide Magistrates Court on Thursday over alleged breaches of food safety standards at Cici's Pizza Kitchen at Hindmarsh, west of the Adelaide CBD.

Mr Shaker, who was not represented by a lawyer during the hearing, told Magistrate Jayne Basheer he believes the 138 charges against him should be dropped.

"I've got nothing to do with the case," the former operator said.

"I wasn't the owner of the business, why should I be charged?"

But Paul Kelly, for the City of Charles Sturt, said the council maintains Mr Shaker was involved in the breaches.

"We say that he was part of the business at the relevant time," he said.

Ms Basheer said that issue would need to be resolved and ordered Mr Shaker reappear before the court in March.

His co-accused, Ms Yalung, who is yet to plead to 88 charges, had her case adjourned to a date in April.

The pair made no comment to reporters outside court but Mr Shaker pulled down his shorts and exposed part of his bottom.

According to court documents, council inspectors found that food at the store - including cooked chicken and pesto - was found on cockroach-infested benches.

Raw chicken was kept above vegetables in a coolroom that was so filthy and dilapidated it could not be effectively cleaned, the documents allege.

They also say that the business sold a pizza that had a staple in it, before inspectors found mouldy food and liquefied vegetables during a visit to the shop in April last year.
